Go beyond the usual tacos and cook this modern Mexican-inspired dish.

Makes 5-6 servings


¼ cup Olive oil

¼ cup Chopped cilantro (wansoy), plus more to garnish

2 Tbsps Minced garlic

4 Tbsps Lime juice

1 tsp Taco seasoning

Salt and pepper, to season

1 kilo Pork belly, sliced


  1. In a mixing bowl, whisk together olive oil, cilantro, garlic, lime juice, and taco seasoning. Season with salt and pepper. Pour marinade into a shallow tray or platter.
  2. Add the pork to the marinade, turining to coat both sides. Cover and leave to marinate for about 1-2 hours.
  3. On a preheated grill, grill the pork belly for about five minutes on each side (depending on the thickness) or until the pork is cooked through.
  4. Squeeze lime juice over the meat for added tang then garnish with chopped cilantro. Serve with rice and tomato salsa on the side.
