The Next Best Thing: Tex-Mex Chicken and Tomato Salsa Salad Recipe

A fusion of US and Mexican cuisines, Tex-Mex cuisine is famous all over the world. Often, it involves the heavy use of cheese, chili powder, and beef. For this recipe, salad gets a makeover, with salsa and roasted chicken to complete its transformation into a Tex-Mex appetizer.


Tex-Mex Chicken and Tomato Salsa Salad
Makes 4-5 servings


1 bunch Romaine lettuce and/or lollo rosa lettuce, rinsed and spun dry

  • Italian or French vinaigrette

½ Avocado, sliced

1 Roasted chicken breast (or any part), cubed

½ cup Bottled tomato salsa

2-3 Tbsps Grated cheddar cheese

  • Corn chips
  • Red kidney beans
  • Crisp bacon bits
  • Chopped hardboiled eggs
  • Sliced or chopped onions
  • Cucumber slices
  • Fresh cilantro leaves


  1. Keep all ingredients chilled until ready to serve.
  2. To plate, toss lettuce leaves lightly in any vinaigrette type of salad dressing.
  3. Assemble lettuce in a large plate or bowl. Top with sliced avocado, chicken, and grated cheese. Top with tomato salsa and corn chips. Serve immediately.
