Be on the Mousse: Mousse Au Chocolat

For some, happiness may seem hard to attain when life constantly throws trials at them. But for others, happiness can be found in a glass of chocolate, carefully sweetened but still leaving a bit of bitterness to remind them of reality. Here’s the recipe for Mousse Au Chocolat, a delightful dessert that can flush your problems away, even for just a little while.


Mousse Au Chocolat

Makes 5-6 servings


2 Good quality semisweet chocolate bars (100 grams each)

1 Tbsp Butter

2 Tbsps Brewed coffee

2 Egg whites

  • Pinch of cream of tartar

2 Tbsps Sugar

2 Egg yolks

½ cup Heavy cream, chilled

2 Tbsps Sugar

2 tsps Vanilla extract

  • Lady fingers
  • Chopped toasted walnuts


  1. Cut up chocolate bars into small squares. Combine chocolate pieces, butter, and coffee in a stainless steel bowl or glass bowl.
  2. Bring a pot of water (about ⅓ full) to a boil. Bring heat to low and let simmer. Place bowl on top and allow chocolate pieces to melt, stirring to distribute heat. Once melted and glossy, remove from heat. Let cool.
  3. Meanwhile, whip egg whites with cream of tartar using a stand mixer or a hand mixer. Add sugar and whip until stiff peaks form to make a meringue. Set aside.
  4. When chocolate mixture has cooled down, add egg yolks and mix well. Gently fold in the meringue.
  5. In another mixing bowl, mix heavy cream, sugar, and vanilla extract. Whip until stiff peaks form. Gently fold the cream into the chocolate mixture, and mix until well-incorporated. Immediately transfer into individual serving cups or stemmed glasses. Cover with plastic wrap and refrigerate until ready to serve.
  6. Just before serving, add ladyfingers as garnish and sprinkle chopped walnuts on top.
