Merienda Mondays: Spicy Cashew Nuts and Strawberry Ginger Ale

Munch on this spicy snack while sipping on this refreshing, summery drink!



4 Tbsps Butter

2 ½ Tbsps Salt

2 Tbsps Brown sugar

2 tsps Cayenne powder

2 tsps Chili powder

2 tsps Paprika

1 kilo Cashew nuts

  1. In a frying pan, melt butter. Add salt, sugar, and spices then gently mix in low medium heat.
  2. When thoroughly mixed, pour butter-spice mixture over cashew nuts in a mixing bowl. Toss and make sure cashews are evenly coated by the spice mix.
  3. Pour cashew nuts on a baking tray and spread evenly. Bake in a preheated 350°F oven for ten minutes. Toss gently and allow to cool before serving. To store, transfer spiced cashews to an airtight container.


3 cups Water

2 cups White sugar

120g Ginger, sliced into fine matchsticks – ???

1 cup Fresh strawberries, stemmed and quartered

*Juice from ½ lemon

2 ½ Liters Soda water


  1. Put sugar, ginger, lemon juice, and water into a saucepan. Bring to a boil over medium-high heat, stirring gently until sugar dissolves. Simmer for ten minutes then turn off heat. Let ginger steep for 30 minutes to an hour.
  2. Remove ginger and add strawberries. Return to gentle heat just until strawberries soften, about ten minutes. Let cool and blitz in a blender or food processor.
  3. To serve, fill glasses with ice and pour about 1/3 part of the strawberry-ginger syrup to 2/3 part soda water.
