Mediterranean Prawns with Mixed Vegetables

Makes 5-8 servings

½ cup Olive oil

4 cloves Garlic, finely chopped

½ tsp Ground cumin

½ tsp Ground ginger

1 ½ tsps. Spanish paprika

½ tsp Salt

*freshly ground black pepper

* Pinch of cayenne pepper

1 kilo Jumbo prawns, butterflied

* Lemon wedges

*assorted vegetables like zucchini, eggplant, tomatoes

  1. Combine the olive oil, garlic, cumin, ginger, and cayenne pepper in a bowl then toss in the prawns, mixing to coat evenly. Season with salt and pepper. Cover the bowl with plastic cling wrap and marinate in the refrigerator for 1-2 hours.
  2. Slice vegetables and toss in olive oil. Season with salt, freshly ground black pepper and a pinch of Italian seasoning. 
  3. When ready to serve, grill the prawns for 2-3 minutes on each side over medium heat. Grill vegetables until just done. Serve with lemon wedges and assorted grilled vegetables.
