Here’s a refreshing salad recipe using these plump and buttery proteins!


Roasted Tiger Prawn Salad

12- 14 Tiger prawns, peeled and deveined.

Olive oil

Salt and pepper

1/4 cup Light mayonnaise

¼ cup Fresh orange juice

1 tsp Orange zest

2 Tbsps Red onions, minced

2 Mangoes, peeled and sliced into cubes

Chopped dill

¼ cup Feta cheese

  1. Heat oven and 400°C.
  2. Place the prawns on baking sheet and sprinkle with olive oil, salt and pepper. Roast for 5-7 minutes and turn once after 2-3 minutes. 
  3. Mix mayonnaise, orange juice, red onions, orange zest and dill in a large bowl then add roasted prawns, mangoes and feta cheese. The sprinkle with red pepper flakes (optional) and sprinkle with dill. Best served cold.
