Orange Pasta with Roasted Black Sesame Seeds Tofu

Makes 6-8 servings

1/2 pack Hard tofu, cubed

4 Tbsps olive oil

1 tsp orange zest

3 Tbsps Black sesame seeds

Salt and black pepper, to season

350 grams Farfalle pasta (cooked according to package instructions)

3/4 cup Freshly squeezed orange juice

1 stalk Spring onions, chopped

1/4 cup Chopped fresh dill

1/8 cup Chopped flat-leaf parsley

1 cucumber medium diced (optional)

1 small red onion diced

  1. Place tofu in a baking dish. Drizzle with two tablespoons olive oil and sprinkle with orange zest then roll in black sesame seeds. Season with salt and black pepper. Baked in the oven at __°F for 30-45 minutes or until golden brown.
  2. Whisk together the rest of the olive oil and orange juice then season with salt and black pepper. Pour over 1/2 of the dressing to the pasta and toss to coat everything.
  3. Add roasted tofu, dill, parsley, cucumber (if using), and red onion to the pasta then toss well. Add more dressing, if desired. Set aside for at least an hour to allow the flavors to blend. Serve warm.
