Rib Eye Steak with Rosemary Butter

Makes 4-5 servings

1/2 cup – 1 cup Unsalted butter, softened

1 Tbsp Chopped fresh rosemary leaves

1-2 fillets Anchovies, mashed (optional)

  1. Mix softened butter with chopped rosemary until well-blended. For extra flavor, a fillet or two of mashed anchovies may be added.
  2. Transfer to a small bowl and cover with plastic cling wrap.  Refrigerate.  Allow compound butter to soften to room temperature an hour before serving.

4 Rib eye steaks

*Salt and freshly ground black pepper, to season

*Sprigs of fresh thyme (optional)

* Olive oil, for brushing

  1. Season steaks with salt and pepper.  Top steaks with thyme for added flavor and aroma. Heat a non-stick pan or cast iron grill over medium.  Brush lightly with olive oil.  When pan is hot, sear rib eye steaks until golden and slightly charred.  Using tongs, flip to cook the other side of the steaks.  To serve, top with softened rosemary compound butter.
