Baked Hash Browns

If you’re a kid at heart, you probably still go to the adult version of pajama parties. Still, no one’s stopping you from going back to the basic sleepover snacks such as this dish. Enjoy a night in with your friends with these bowls of baked hash browns!

Pajama Party Baked Hash Browns
Makes 4 servings

4 Frozen hash browns, thawed

4 Tbsps Mayonnaise

1 can Corned tuna or 1 cup sautéed corned beef

1 cup Grated quick-melting cheese

4 Whole eggs, beaten

  1. Prepare four glass ramekins. In a bowl, mash hash browns. Add mayonnaise and mix well.
  2. Divide mashed hash browns into the four bowls. Press down with a spoon to make an even layer.
  3. Top this with a layer of corned tuna or sautéed corned beef. Sprinkle generously with grated quick-melting cheese.
  4. Preheat oven to 350˚F. In a small bowl, break an egg and beat well with a fork. Pour over the cheese layer. Repeat until all other ramekins are topped with beaten egg.
  5. Transfer prepared ramekins to a tray and bake in the preheated oven for 10 minutes or until top is golden and bubbly. Let rest for 1-2 minutes to let eggs set some more. Serve hot with buttered toast or steamed rice.
