Rocky Road Mousse

Makes 4-5 servings

3/4 cup Semi-sweet chocolate pieces

2 cups Chilled whipping cream

1 Tbsp Powdered sugar

1/2 cup Toasted cashew nuts, coarsely chopped

1/2 cup Mini marshmallows (or regular marshmallows sliced into quarters)

  1. Melt the semi-sweet chocolate chips in a double boiler or microwave.  Let cool. Set aside.
  2. In a separate bowl, beat the whipping cream with powdered sugar until stiff.
  3. Fold the cream into the melted chocolate and mix until well-combined.  Add cashew nuts and marshmallows. 
  4. Transfer mousse to a decorative bowl or in individual glasses.  Chill for 3-4 hours until firm.  Garnish with chocolate chips, nuts, and marshmallows.
