Mais con Yelo gets a dark makeover—and we love it!

Mais Con Yelo is definitely a Filipino dessert favorite or a great afternoon snack during hot days. Made with shaved ice, evaporated milk, sweet corn, and lots of sugar, it’s sometimes even served with a scoop of vanilla ice cream on top. To make it more interesting, glutinous black rice is added into the mix. Not only does it add texture, but black rice also contains lots of health benefits like iron, antioxidants, and amino acids. It’s also known to fight cancer and helps lower bad cholesterol. Now that’s a guilt-free dessert!


Mais Con Yelo Black Rice Pudding with Pinipig

Makes 12 servings


1 cup Black glutinous rice, soaked in water overnight then drained

1 ½ cups Water

3 cups Coconut milk, divided

1/2 cup + 1tbsp Coconut sugar

1 (425g) can Cream style corn

¾ cup toasted pinipig

  1. Combine the rice with the water in a saucepan. Bring to a boil then lower the heat and simmer for ten minutes or until the rice has absorbed most of the water.
  2. Add half of the coconut milk, coconut sugar and cream style corn. Simmer over low heat for ten minutes.
  3. Add remaining coconut milk and simmer for another ten minutes or until rice is fully cooked and the mixture is thick.
  4. Turn off the heat and set aside to cool. Chill in the refrigerator and serve cold.  Top with pinipig.
