Mango Chia Jam

Makes 1 cup

2 Mangoes, sliced

2 Tbsps Chia seeds

2 tsps Coconut nectar or raw honey

  1. Using a glass, scoop the flesh out of each mango cheek, leaving the skin and bone behind.
  2. Purée the mango in a blender until smooth and transfer to a bowl.
  3. Add the chia seeds and coconut nectar into the blended mangoes. Mix well and cover with plastic wrap. Let the mango-chia mixture set in the refrigerator overnight.
  4. Transfer the mango chia jam to a glass jar, seal, and store in the refrigerator up to 3-4 days.
