Can’t pick between seafood and pork? With this salsa-topped dish, you won’t even need to choose between the two. Once it’s carefully wrapped with slices of bacon, the fish fillet will go through a few more easy steps until it’s ready to roll right onto your table.


Baked Bacon-Wrapped Fish Fillet with Mango Salsa

Makes 4 servings


4 pcs White fish fillet, about 120g each

  • Salt and ground black pepper

3 Calamansi

  • Cayenne pepper

8 Basil leaves

12 slices Honey-cured bacon

8 spears Mini asparagus


1 Tomato, cut into small cubes

1 Ripe mango, cut into small cubes

1 Small onion/sibuyas tagalog, minced

1 clove Garlic, minced

1 tsp Sugar

  • Salt and pepper

1 Tbsp Olive oil

  • Cayenne pepper

5-7 leaves Cilantro, roughly chopped


  1. Season fish fillets with salt, pepper, the juice of two calamansi, and cayenne pepper. Place two large leaves of basil side by side on the middle of each fillet. Wrap each fillet with three slices of bacon overlapping one another.
  2. In a hot pan, sear each bacon-wrapped fish until bacon is crisp. Finish cooking in a preheated 200°C oven for 7 to 8 minutes.
  3. Season asparagus with salt and pepper, and put into the oven once fish is halfway done.
  4. Meanwhile, combine tomato, mango, onion, and garlic. Add in remaining calamansi juice, sugar, salt, pepper, olive oil, and cayenne pepper.
  5. Add the cilantro leaves to salsa and mix gently.
  6. Serve fish fillet by topping it with asparagus and the salsa.
