Dairy-Free Chocolate Mousse with Almonds

 

Makes 4 servings

 

1 block Soft silken tofu (300g)

⅛ cup Coconut nectar or honey

1 Tbsp Soy milk

2 Tbsps Peanut butter

2 Tbsps Unsweetened cocoa powder

¼ cup Flaked almonds

 

  1. In a blender, purée the tofu, coconut nectar, soy milk, peanut butter, and cocoa powder until creamy.
  2. Divide the mousse into 4 serving glasses and top with almonds. Chill in the refrigerator for at least one hour before serving.
