Don’t buy your lechon manok! Learn to make it at home!

People often depend on popular local chicken rotisseries for their lechon manok (grilled chicken) fix. But you can also easily make it at home. One advantage is that you can customize the taste to your liking. You can add chilis for added heat or even add more spices like cayenne pepper, cumin and, oregano to make the flavors interesting.



Makes 4-5 servings


1 Whole chicken

1/4 cup Butter

6 cloves Garlic, minced

1 Onion, minced

1/2 tsp Black pepper

3 Tbsp Soy sauce

1 tsp Brown sugar

5-6 stalks Lemon grass (tanglad)

  1. Clean chicken and pat dry.
  2. In a bowl, combine butter, garlic, onion, black pepper, soy sauce, and sugar. Mix well. Rub the chicken, including inside the cavity and under the skin, with the butter mixture.
  3. Pound and sprinkle some water over the lemongrass. Insert inside the chicken cavity.
  4. Bake the chicken in a preheated 350°F for 1 -1 ½ hours. Use leftover butter mixture for basting.
