Join the Upper Crust: Potato Chip Crusted Chicken Recipe

Whether you’re enjoying a movie or chilling with friends, potato chips come in handy whenever you feel like snacking at night. For this recipe, they also serve as a coating for a baked chicken’s crispy crust. The best thing is, you can pig out on this dish at any time of the day.


Potato Chip Crusted Chicken
Makes 4-5 servings


1 Tbsp Sea salt

1 tsp Freshly ground black pepper

1 Whole chicken, cleaned

1 ¼ cups Mayonnaise

3 Native tomatoes, slit crosswise

1 pack Salted potato chips


  1. Pat the chicken dry and rub salt and pepper on the chicken’s skin and cavities. Cover and let stand overnight in the chiller.
  2. An hour before cooking, rub mayonnaise on the chicken’s skin and cavities. Cover and put back in the chiller for another hour.
  3. Put the chicken and tomatoes in a roasting pan and bake in a preheated 320°F oven for 45 minutes or until golden brown.
  4. Remove the chicken from the oven and cover it with potato chips, pressing the chips on the chicken.
  5. Put the chicken back in the oven and bake until the potato chips are golden brown in color, about ten minutes. Serve hot.
