Prepare holiday dishes with a wholesome twist

Superfood Trifle

Makes 4 servings

Chia Oat Pudding:

1 cup Soy milk or almond milk

1/2 cup Coconut milk

1 cup Rolled oats

2 Tbsps Chia seeds

2 Tbsps Coconut nectar or honey

  1. Mix all the ingredients in a large bowl. Cover the bowl with plastic wrap and chill in the refrigerator for at least 4 hours or overnight.

Vanilla Pudding:

2 cups Soymilk or almond milk

1/2 cup Coconut sugar

1/8 tsp Salt

1 tsp Vanilla extract

1/8 tsp Cinnamon

3 Tbsps Cornstarch mixed with 1/2 cup soymilk or almond milk

  1. In a medium saucepan, combine the soymilk, coconut sugar, salt, vanilla extract, and cinnamon.  Bring to a gentle boil.
  2. Add the cornstarch slurry and whisk over medium heat until the mixture becomes thick and creamy, about 2 minutes.
  3. Transfer the mixture to a bowl and let it cool.  Cover the bowl with cling wrap and chill in the refrigerator for at least 2 hours or overnight.


2 cups Strawberries, hulled and sliced

2 Kiwis, peeled and sliced into half moons

1/2 cup Toasted walnuts, chopped

To assemble: Use four glasses and fill the bottom with chia oat pudding. Add a layer of strawberries and kiwi, followed by a layer of vanilla pudding. Add another layer of chia oat pudding and sprinkle with chopped walnuts. Top with slices of strawberries and kiwi.
