Hush Puppy Love: Shrimp Hush Puppies

Hush puppies are bite-sized savories that usually accompany seafood or other deep-fried dish made out of cornmeal. Corn-based dishes are popular especially in the southern part of USA as it’s the staple crop of the native Americans. No one can actually pinpoint the origins of the said appetizer but its name leads us to some compelling clues. Some people theorized that hush puppies were made from leftover cornmeal mixture (probably from the batter) that hunters, fishermen, etc. have. They fry these leftover mixtures to feed to the dogs hence, to hush the puppies.


Shrimp Hush Puppies

Recipe by Marie Villanueva-Pascual

Makes 3-4 servings



1 cup All-purpose flour

¾ cup Cornmeal or pulverized taco chips

¼ cup Cornstarch

1 ½ tsps Baking powder

1 tsp Salt

½ tsp Ground black pepper

½ tsp Cayenne pepper

½ tsp Paprika



½ cup Milk

1 Egg

1 tsp Grated garlic*

¼ cup Chopped scallions

½ kilo Medium-size shrimps, peeled, deveined, and roughly chopped

¼ – ½ cup Water


* Cooking oil, for deep-frying


Note: Fresh garlic is best for this recipe. Try to avoid powdered garlic if you can.


  1. Combine all of the dry mix ingredients in a bowl. Pour milk, egg, garlic, and scallions into the dry ingredients and mix quickly until the batter becomes pasty but not dry. If mixture is dry, add about ¼ – ½ cup water. Add the water a spoonful at a time, to prevent mixture from getting runny.
  2. Pour cooking oil into a pot about 3 inches high and put on medium-high heat. Using a small ice cream scooper, scoop a serving of the batter then gently drop in the oil to deep-fry. Cook until all sides are golden brown.
  3. Place fried hush puppies on a rack or on a plate lined with paper towels to drain excess oil. Serve with Onion and Chive Dip.



1-2 Tbsps Butter

¼ cup Thinly sliced white onion

½ cup Sour cream

¼ cup Mayonnaise

¼ cup Chopped chives or scallions

  • Salt and pepper, to season
  • Dash of hot sauce


Melt butter in a pan over low heat and sauté onions until soft and slightly caramelized. Turn off heat and set onions aside. In a bowl, combine sour cream, mayonnaise, chives or scallions, and the caramelized onions. Season with salt and pepper, plus some hot sauce, to taste.
