Usually, hummus is made from mashed chickpeas, tahini (sesame seed paste), olive oil, salt, and garlic. For this recipe, we are changing the name of the game as we put a refreshing twist to this popular dipping sauce. It has ingredients that are easier to find and steps that makes it easier to prepare.
MINTED GREEN PEA HUMMUS
Makes 1 ½ cups
1 ½ cups Frozen green peas
1 clove Garlic, peeled
A handful of mint leaves
½ cup Olive oil
Juice of 1½ lemons
Salt and pepper, to season
Crudités or pita crisps, for serving
- Quickly blanch the peas in boiling water for about ten seconds and pour into a strainer. Rinse the peas under running water. Set aside and allow to cool completely.
- When cooled down, place the drained peas in a food processor with the peeled garlic clove and mint leaves. Give it a few pulses then purée everything while slowly adding in the olive oil.
- Add the lemon juice and pulse again. Scrape the sides of the processor to make sure everything is well-blended. Season with salt and pepper to taste. Serve with crudités and some pita crisps. You may adjust the consistency by adding more or less olive oil.
