Homemade Calamansi Muffins

Spread the love by baking a batch of these sweet-smelling calamansi-flavoured muffins. The tanginess of the petite citrus adds a nice balance to the sweetness of the bread. Don’t forget to drizzle in a generous amount of easy-to-make calamansi glaze. For a more indulgent treat, why don’t you consider making a calamansi buttercream topping as well?

Makes 9 cupcakes

1 ½ cups Maya All-Purpose Flour
1 tsp Baking powder
¼ tsp Iodized salt
½ cup Softened butter
1 cup White sugar
2 Large eggs
¼ cup Fresh milk
¼ cup Freshly-squeezed calamansi juice
1 tsp Vanilla extract

5 Tbsps Confectioners’ sugar
1 Tbsps Freshly-squeezed calamansi juice
Zest of 2-3 calamansi

  1. Line a muffin pan with cupcake liners or coat with nonstick baking spray.
  2. Mix the Maya All-Purpose Flour, baking powder, and salt together in a medium bowl. Make a well in the center and set aside.
  3. In another bowl, mix together the butter and sugar. Add the eggs, milk, calamansi juice, vanilla extract, and mix well.
  4. Carefully pour the wet ingredients into the dry ingredients. Mix until just moistened. Do not over mix.
  5. Spoon the batter into the prepared muffin pan then bake in a preheated 350°F oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the cupcakes are baking, make the glaze by combining the confectioners’ sugar, calamansi juice, and calamansi zest in a bowl. Mix until well blended.
  7. Drizzle the calamansi glaze on top of the warm
