Quinoa has a neutral flavor and can be used in a variety of dishes. You can add it to salads, stir-fries, wraps, and even desserts. The possibilities are endless. For this recipe, we’ve made added it into an easy-to-make hearty soup flavored with dried herbs and spices. Serve it with a simple salad or with light-sauce pasta.


Makes 4 servings

2 Tbsps Olive oil
½ cup Chopped onion
1 Tbsps Chopped garlic
¼ cup Celery slices
¼ cup Chopped green bell pepper
1 (28oz) can diced tomatoes
4 cups Chicken broth
2 tsps Chili powder
¼ tsp Dried thyme leaves
¼ tsp Dried oregano leaves
¼ tsp Cumin
1 (14oz) Can red kidney beans, drained and rinsed
1 cup Cooked quinoa
Salt and black pepper, to season

1. In a non-stick casserole pour the olive oil over medium heat. Sauté the onion, garlic, celery, and green bell pepper until tender.
2. Add the canned tomatoes with liquid and chicken broth then season with chili powder, thyme, oregano, and cumin. Bring to a boil then simmer for 20 minutes.
3. Add the kidney beans and cook for a minute. Turn off the heat and stir in the quinoa.

4. When quinoa has cooked turn off heat and transfer soup to a serving bowl. Serve immediately.
