A healthier pasta for a healthier you

lemon and asparagus pasta with salmon

Believed to be one of the most nutritious foods in the planet, salmon is loaded with various nutrients and healthy oils. It’s a versatile protein that you can mix with any dish to give it a healthy boost! See how salmon works its magic in this tasty pasta dish!

 

Lemon and Asparagus Pasta with Salmon
Makes 2-3 servings

 

2 Tbsps Olive oil

1 Tbsp Chopped onions

1 tsp Chopped garlic

2 Tbsps Butter

3 Tbsps Lemon juice

2 cups Heavy cream

Salt and pepper, to season

Zest from 1 lemon

Fresh dill (optional)

1-2 slices Salmon fillet

1 bunch Fresh asparagus

200 grams Spaghetti noodles

  1. Cut up asparagus into 1-inch segments, using only the upper 1/3 of the stalks. Discard the lower 2/3 of the asparagus. Blanch asparagus in boiling water or steam just until it changes color. Do not overcook.
  2. Season salmon fillet with salt and pepper. Heat cooking oil in a pan. Sear salmon fillet and cook both sides until flesh changes color. 
  3. Next, make the cream sauce. In a pan, heat olive oil and sauté onions gently for about five minutes. Add garlic and cook for a few more minutes until fragrant.
  4. Mix in butter and lemon juice and simmer for a few minutes over low fire. Stir in heavy cream and season with salt and pepper.
  5. Add steamed asparagus spears to the cream sauce. Taste and adjust seasoning with salt, pepper, lemon zest and fresh dill, if using. Turn off heat.
  6. Cook pasta in boiling salted water. Reserve pasta water and add to the cream mixture to thin out sauce.
  7. Serve pasta with sauce on the side or toss pasta in the sauce. Transfer to a serving dish then top with the seared salmon fillet.
