A Hawaiian Delight: Ono Sweet Potato Mash

A baked treat that deserves a spot in your list of must-try dishes. It’s definitely delightful and delicious!


Ono Sweet Potato Mash

Makes 5-6 servings

½ kilo Sweet potatoes (orange variety)

½ cup Sugar

½ cup Water

3 Ripe Cavendish bananas

1 tsp Ground cinnamon

½ tsp Salt

¼ cup Melted butter

1 Tbsp Brown sugar

¼ cup Macadamia nuts or cashew nuts, chopped

¼ cup Crushed cornflakes

  1. Boil sweet potatoes in a pot of water until fork tender.
  2. Meanwhile, prepare syrup by boiling the sugar and water until sugar is dissolved. Set aside.
  3. Peel sweet potatoes and mash while still hot.
  4. Peel bananas and mash them. Combine bananas and sweet potatoes.
  5. Mix in sugar syrup. Add cinnamon and salt then mix well.
  6. Transfer mash to a baking dish. Top with melted butter then sprinkle with brown sugar. Sprinkle chopped nuts and crushed cornflakes while reserving some for garnish.
  7. Bake for 20-30 minutes in a 350°F oven. Let it rest before serving warm. Top each Ono Sweet Potato serving with a spoonful of vanilla ice cream then garnish with more nuts and cornflakes.
