A Hawaiian Delight: Island Fried Rice

Taste the combination of unique flavours with this Hawaiian island style fried rice!

Island Fried Rice

Makes 5-6 servings

3 Tbsps Canola oil

1 can Luncheon meat, cut into small dice

3 cloves Garlic, minced

1½ cups Frozen mixed vegetables (carrots, peas, and corn), blanched and drained

6 cups Cooked rice (preferably day-old rice)

2 Tbsps Oyster sauce

2 Tbsps Japanese soy sauce

1 Tbsp Sugar

1 Scrambled egg, cooked in a wide frying pan, then cut into strips

*Salt and ground white pepper, to season

*Chopped spring onions, to garnish

  1. Heat canola oil in a large wok or sauté pan over medium heat. Toss in diced luncheon meat and cook for about five minutes, until pieces are lightly toasted.
  2. Add garlic and cook for a minute. Toss in blanched mixed vegetables and cook until heated through.
  3. Add rice and continue to mix until vegetables are evenly distributed.
  4. In a bowl, combine oyster sauce, soy sauce, and sugar. Pour this mixture over the rice and stir until rice is evenly coated with the seasoning sauce.
  5. Toss in scrambled egg strips and season with salt and white pepper. Transfer rice to a serving bowl or platter then top with chopped spring onions. Serve immediately.
