Fit for an Emperor: Caesar Salad with Grilled Bacon

Thank Italian immigrant Caesar Cardini for this legendary salad. Created after Cardini had to make do with what he had after a 1924 Fourth of July rush, the Caesar salad has since become a popular dish, from the tables of the Hollywood’s elite to your very own kitchen counter. This time, we’re throwing in grilled bacon to add a crispy and meaty twist to this familiar salad.


Caesar Salad with Grilled Bacon


Makes 4 servings


2 Egg yolks

1 tsp Mustard

1 Tbsp Bagoong

  • Black pepper
  • Cayenne pepper

½ cup Vegetable oil

1 Calamansi

4 slices Slab bacon (250gss to 300g in total)

2 heads Romaine lettuce, washed and torn into bite sized pieces

100g Fresh parmesan cheese

  • Salt


  1. In a food processor, or with a whisk by hand, combine egg yolks, mustard, bagoong, black pepper, and cayenne pepper. Slowly pour in oil, while continuously mixing, until mayonnaise-like sauce is formed. Squeeze calamansi juice on the sauce. Mix again and set aside.
  2. Grill the bacon 1 to 2 minutes on each side until fully cooked. Set aside.
  3. Assemble the salad by mixing lettuce with the dressing. Top with the grilled bacon strips.
  4. Shave some Parmesan cheese over the salad using a vegetable peeler.
