3 ingredients to make the best grilled fish dish ever

There’s something about grilled fish that’s so primitive yet so alluring and appetizing. The key to making this recipe a delightful one is to use the freshest fishes and let the other ingredients like olive oil and seasoning to accentuate its flavors. The tomato-olive salsa on the other hand lends a refreshing burst of flavor to complete this Mediterranean-inspired meal.



Makes 4-5 servings


1 kilo Fresh fish such as dalagang bukid, labahita, maya-maya or lapu-lapu (choose 10-12 pieces of small fish, 2 medium fish or 1 large fish)

Extra virgin olive oil, for drizzling

Rock salt and freshly ground black pepper, to season



2 cups Tomatoes, seeded and diced

1/2 cup Black or green olives, pitted and sliced

1 Small red onion, minced

1 clove Garlic, minced

1/4 cup Chopped fresh parsley

10-12 Fresh basil leaves, sliced thinly

Salt and freshly ground black pepper, to season

2 Tbsps Olive oil

Juice of 1 lime or green lemon

Grilled lemon slices, for garnish

Grilled tomato slices, for garnish

Chopped parsley, for garnish

Extra virgin olive oil, for drizzling

  1. Have the fish cleaned, gutted and scaled. Rinse under running water. Pat dry with paper towels. Drizzle olive oil on both sides of fish. Season liberally with salt and freshly ground black pepper. Set aside in the refrigerator until ready to grill.
  2. Prepare tomato-olive salsa. In a medium bowl, combine diced tomatoes, olives, onions, garlic, parsley, and basil. Season with salt and freshly ground black pepper. Toss in olive oil and lime juice. Cover bowl with plastic cling wrap and refrigerate until ready to serve.
  3. Grill fish until slightly charred on both sides.
  4. While the fish is grilling, brush lemon and tomato slices with olive oil and grill.
  5. Prepare plate by arranging grilled fish, grilled tomatoes and grilled lemon slices. Drizzle olive oil over fish and serve with lime wedges.  Serve tomato-olive salsa on the side.
