Grilled Asian Beef Skewers and Turmeric Coconut Rice

Throw together this simple yet flavourful marinade to get those tasty beef skewers!


Grilled Asian  Skewers and Turmeric Coconut Rice

3 Tbsps Red curry

1 Medium red onion

½ inch Ginger, peeled chopped

2 stalks Lemongrass, roughly chopped

1 Tbsp Sesame oil

2 Tbsps Brown sugar

3 Tbsps Honey

5 Garlic cloves

¼ cup Soy sauce

500g Beef sirloin or tenderloin, cut into cubes

1 small can Sliced pineapples, slices in quarters

1 Red bell pepper, cut into cubes

1 Green bell pepper, cut into cubes

1 Yellow bell pepper, cut into cubes

1 Medium onion cut into cubes

  1. In a food processor mix the curry powder, red onion, ginger, lemon grass, sesame oil, brown sugar, garlic red chilli and soy sauce. Season with salt and pepper. Mix until it turn into paste.
  2. Marinate the beef for 3 hours or overnight. Tread the beef, onion, red, green and yellow peppers and pineapple into a BBQ stick. Grill and brushing with extra sauce, until beef is medium-rare.

Turmeric Coconut Rice

1 Tbsp Garlic, minced

2 Tbsps Vegetable oil

2 Tbsps Turmeric powder

2 cups Rice

3 cups Coconut water

  1. In a heavy pot, sauté garlic in vegetable oil until golden brown the add Turmeric powder and rice the seasoned with salt and pepper. Coat the rice with turmeric powder then add 3 cups of water. Cook until rice is fluffy.
