Usual breakfast fares getting boring? Both young and young-at-hearts will enjoy this whimsical take on the breakfast classic. Inspired by the Dr. Seuss book of the same name, this recipe calls for the addition of avocado that gives our favorite ham and eggs a creamier taste and added health benefits. Sam-I-am would definitely love this for breakfast (or any time of the day)!

 

GREEN EGGS AND HAM

Makes 6 servings

 

1 Large or 2 small avocados

4 Hard-boiled eggs, chopped

1/3 cup Yogurt

1/3 cup Japanese mayonnaise

┬╝ cup Chopped celery

2 Tbsps Chopped spring onions

2 Tbsps Fried garlic bits

Juice of 1 lemon or 2 calamansi

Dash of curry powder

Salt and pepper, to season

3 Plain bagels

Butter for spreading

6 slices Farmers ham

Chopped spring onions, to garnish

Spanish paprika, to garnish

 

  1. Scoop out avocado flesh. Mash a small portion and chop into cubes the rest of the avocados.
  2. Combine avocados with eggs in a mixing bowl. Mix in yogurt, Japanese mayonnaise, chopped celery, and fried garlic.
  3. Season mixture with lemon or calamansi juice, curry powder, salt, and pepper. Mix everything together until well combined. Chill the mixture in the refrigerator for at least an hour.
  4. Slice bagel in half crosswise then toast. Spread sliced bagels with butter then top with a slice of ham and a spoonful of the avocado mixture.
  5. Garnish with spring onions and a sprinkle of paprika. Serve immediately.
