Give Your Pasta A Healthier Twist

Give your frying pans a rest, the cooking method used in this recipe—grilling—is a healthier option!

Grilled Seafood Pasta

150g Prawns, peeled and deveined 

150g White fish, sliced into cubes
150g Squid, peeled and sliced into rings
4 Tomatoes, sliced into quarters 

3 Tbsps Olive oil
4 Tbsps Lemon juice
2 Tbsps Chopped parsley 

Salt and freshly ground black pepper

Pasta Sauce
1/4 cup Olive oil

4 cloves Garlic, minced
2 Tbsps Lemon juice

3 Tbsps Chopped parsley
1/4 cup Toasted pine nuts
1/2 tsp Salt

Freshly ground black pepper

  1. In a bowl, marinate the prawns, fish, and tomatoes in a mixture of olive oil, lemon juice, parsley, salt and pepper (*NOTE: Do this about 30 minutes before serving – do not marinate for too long!)
  2. Boil the pasta until al dente. While the pasta is cooking, make the sauce. Heat olive oil over low heat and then add garlic. As soon as it sizzles, turn off heat and allow oil to cool. 
  3. To this oil, add lemon juice, parsley, and pine nuts. Season with salt and pepper. 
  4. When the pasta is cooked, drain the water then return to the pot. Drizzle the lemon parsley sauce on top of the pasta and toss. Transfer pasta to a serving platter then top with the grilled seafood and grilled tomatoes. Sprinkle more chopped parsley on top as garnish.
