Gingered Chicken with Mango and Cilantro

Have you ever cooked en papillote? This method, which calls for wrapping meat or fish in a paper pouch before cooking, can really lock in your seasoning, making for a thoroughly flavorful dish. Try it out with this fragrant chicken recipe!
  • 3 pcs Ripe Mangoes, peeled, pitted and cut into 1” strips
  • 4 pcs Chicken fillets
  • 2 tsp McCormick Ginger Ground
  • ½ cup Fresh cilantro leaves
  • McCormick Iodized Salt & Black Pepper Ground, to season
  • 2 tbsp Extra-virgin olive oil
  • 1 pc. Lemon, cut into wedges for serving
  1. In a large pan bring water to a boil & simmer.
  2. Place mango strips in center of 4 long pieces of baking paper.
  3. Season chicken with McCormick Ginger Ground, salt and pepper. Top mangoes with chicken and drizzle each with olive oil and sprinkles of cilantro leaves.
  4. To fold baking paper, bring long ends of paper together and fold down 3 times to make a seam. Tuck ends underneath to secure. Place packets in simmering water and cook for 8 to 10 minutes or until chicken is cooked through. Serve with lemon wedges.
