Tuna Patties With Mango Salsa

Makes 4-6 servings

2 Tbsps Canola oil

1 Medium onion, minced

2 cloves Garlic, minced

1 stalk Celery, minced

1/2 cup Minced carrots

2 cans Tuna flakes in brine, well-drained

1/4 tsp Cumin powder (optional_

1/8 tsp Salt

1/8 tsp Ground black pepper

2-3 Tbsps Fine breadcrumbs

2 Eggs, beaten

*Cooking oil for frying

  1. Heat cooking oil in a frying pan over low heat. Sauté onions until soft, about 3 minutes. Next add garlic and celery, then cook for another 2 minutes.
  2. Add carrots and cook over low heat for 2-3 minutes, until all the vegetables are soft. Remove to a bowl and let cool.
  3. In a mixing bowl, empty two cans of drained tuna flakes. Season with cumin, salt, and ground black pepper. Add breadcrumbs, eggs, and sautéed vegetables to the tuna. Mix well.
  4. Make uniformly sized patties by using a 1/4 measuring cup to scoop the tuna.

Mango Salsa

1 cup Chopped tomatoes

1/2 cup Chopped onions

1 ripe mango, diced small

1/2 cup Chopped fresh cilantro leaves

1-2 Red bird’s eye chili peppers, sliced

*Juice of 1/2 lime or green lemon

1-2 tsps Sugar

*Salt and peppet, to taste

  1. Combine tomatoes, onions, mango, fresh cilantro leaves, and red chili peppers in a bowl. Sseason with lime juice, sugar, salt, and freshly ground black pepper. Cover with plastic wrap and leave in the refrigerator to chill.
  2. Serve hot tuna patties with chilled Mango Salsa on the side.
