Fresh Catch of the Day: Harissa Gambas

A perfect afternoon dish bursting with delicious Mediterranean flavours!

Harissa Gambas

Makes 2-4 servings

12 pieces of Jumbo shrimp – peeled and deveined (you can use frozen just defrost ahead of time)

2 cloves Garlic finely minced

1 small Red onion sliced thinly

2-3 tsps of Harissa paste (adjust to your desired spice level)

½ tsp Dried Italian herbs

1 Tbsp Balsamic vinegar

Olive oil

Salt and pepper to taste

Fresh cilantro/wansoy for garnish

Lime zest for garnish

  1. In a shallow pan on high heat, heat some olive oil and sauté the onions till a bit charred and golden.
  2. Lower the heat to medium and add the garlic and the shrimp. Add the harissa paste and toss everything together quickly as the shrimp cooks.
  3. Deglaze the pan with the balsamic vinegar making sure to scrape whatever might be at the bottom.
  4. Lower the heat and add the Italian herbs and season with salt and pepper to taste.
  5. Serve immediately topped with lime zest and fresh cilantro.
