Fresh Catch of the Day: Cheesy Baked Salmon

Mayonnaise brings out the magic in this simple dish, giving a crispy yet still creamy crust on baked salmon!

Cheesy Baked Salmon

Makes 6-8 servings

1 ½ kilos Salmon fillet or whole slab salmon fillet

*Salt and ground white pepper, to season

1 ½ cups Mayonnaise

¼ cup Chopped fresh dill

¼ cup Grated Parmesan cheese

2 Tbsps Lemon juice

  1. Rinse salmon and pat dry with paper towels. Lay fillet on a clean chopping board. Season salmon with salt and pepper. Preheat oven to 375 F.
  2. In a bowl, combine mayonnaise, chopped dill, Parmesan cheese, and lemon juice. Season with salt and ground white pepper. Mix well.
  3. Spread about 2 tablespoons of dill mayo mixture on the bottom of a baking dish. Then place salmon fillets on top. Spread dill mayo generously all over the top and sides of the fish.
  4. Bake salmon for 15-20 minutes in the oven or until golden in color. Serve with rice, couscous, or pasta.
