Baked Soy Ginger Fish

2 Red snapper fillets or any white fish fillet (about 600 grams)

*Salt and freshly ground black pepper, to season

4 Shiitake mushrooms, thinly sliced

1 1/2 thumb-size ginger, peeled, finely julienned

1/4 cup Japanese soy sauce

1 Tbsp Rice wine

1 Tbsp Sesame oil

1 Tbsp Water

1 bunch scallion, chopped (white and light green parts only)

4 cilantro sprigs

  1. Dry fish fillet with paper towels. Season with salt and pepper on both sides. Place the fish in a baking dish.
  2. Add the shiitake mushrooms and ginger on top of the fish then pour in the soy sauce, rice wine, sesame oil, and water.
  3. Cover the baking dish with aluminum foil and bake in the oven at __°F for 15-20 minutes or until it easily flakes with a fork. Garnish with scallions and cilantro sprigs. Serve hot with blanched bok choy.
