cleopatra's delight

Best known for her stint as a ruler of Egypt, Cleopatra cemented her role in history with the help of her beauty and her intelligence. Aside from these, she was also infamous for her love affairs with Julius Caesar and Mark Antony, a proof that it’s not easy to satisfy this queen. But here are bite-sized snacks that are up to her standards, carefully made for her delight.

Cleopatra’s Delight
Makes 3-4 servings

¾ cup Chopped raisins

2 tsps Light rum

¼ cup Butter

¾ cup Flour

⅓ cup Corn syrup

½ cup Confectioners’ sugar

½ tsp Vanilla extract

⅓ cup Chopped cashew nuts

  1. In a small bowl, combine raisins and rum. Let stand for an hour.
  2. In another bowl, cream butter using a wire whisk until it’s yellow in color. Transfer creamed butter to a small pot and stir in flour, corn syrup, and confectioners’ sugar. Cook over low heat for 2-3 minutes.
  3. Remove from heat then add the soaked raisins and vanilla extract. Mix well.
  4. Spread mixture in a shallow, buttered pan then chill in the refrigerator until firm.
  5. Cut into small squares and roll in chopped cashew nuts. Chill until ready to serve.
