Fiesta Fridays: Mexican Fiesta Rice

Celebrate Fridays with this Mexican-inspired meal!


Mexican Fiesta Rice

Makes 4-5 servings

2 Tbsps Vegetable oil

1 Onion, chopped

2 cups Long grain rice, washed and drained

4 cloves Garlic, minced

1 can (800 g) Crushed tomatoes

1 Red bell pepper, diced

2 Green bell peppers, diced

2 Tbsps Taco seasoning

2 cups Chicken broth

Salt and pepper, to season

Chopped cilantro, to garnish

  1. Heat oil in a large skillet over medium heat. Add onions cook until translucent. Reduce heat to low then add rice and garlic. Stir until rice is coated with the oil and onions.
  2. Add crushed tomatoes and bell peppers then bring mixture to a simmer, about two minutes. Stir constantly and then add the taco seasoning.
  3. Add chicken stock and stir. Taste and season with salt and pepper, if needed. Broth should be very flavorful. When the mixture boils, cover pot and reduce heat to low. Simmer for 10-15 minutes or until rice is done. Garnish Mexican Fiesta Rice with chopped cilantro before serving.
