Wake up to this refreshing breakfast idea using chia seeds


Breakfast Papaya Boats

Makes 4 servings

2 cups Rolled oats

1 cup Soymilk or almond milk

1 cup Coconut milk

6 Tbsps Coconut nectar or raw honey

⅛ tsp Ground cinnamon

2 Small ripe papayas, halved and seeds removed

1 Banana, peeled and sliced

4 tsps Chia seeds

2 Tbsps Toasted sliced almonds 

4 tsps Desiccated coconut

4 tsps Dried cranberries

  1. In a bowl, combine the oats, soymilk or coconut milk, coconut nectar, and ground cinnamon. Mix well.
  2. Cover the bowl with plastic wrap and allow the oats to soak overnight in the refrigerator.
  3. The following day, assemble the papaya boats by filling the hollowed papaya halves with the overnight oats mixture.
  4. Top with banana slices, chia seeds, almonds, desiccated coconut, and cranberries. Serve immediately.
