Easy-to-Make Pigs in a Blanket

Pigs in a Blanket

Makes 6-8 servings

2 ⅓ cups All-purpose flour, sifted twice

1 Tbsp White sugar

1 tsp Baking powder

½ tsp Salt

6 Tbsps Unsalted butter, cubed

¼ cup Grated Parmesan cheese

¾ cup Buttermilk (or substitute with 1 cup milk + 1 tbsp vinegar or lemon juice)

1 pack Cocktail hotdogs

(500 g)

1 bar Cheddar cheese, cut into sticks

*Egg wash (1 egg + 3 Tbsps milk)

  1. Sift all dry ingredients into a mixing bowl. Cut the butter into the flour mixture until the mixture is crumbly. Stir in Parmesan cheese and mix well until evenly distributed.
  2. Make a well in the center of the dry ingredients. Pour the buttermilk inside the well. Slowly start to draw in the flour from the edges of the well with a fork, until the flour mixture and buttermilk are completely combined forming a ball of dough. Knead lightly but do not overknead. Let the dough rest for about 3-5 minutes.
  3. Transfer the dough to a floured worktable and dust the top of the dough with more flour.
  4. Use a rolling pin to roll out and shape the dough into a 7 x 15 inch rectangle.
  5. Cut the dough into small rectangles using a pizza cutter or a sharp knife and cut each rectangle diagonally to form two triangles.
  6. Place one hotdog and a slice of cheese on the shortest side of the triangle and roll it up, sealing the end with egg wash. Repeat with the remaining dough, hotdogs, and cheese.
  7. Place the pigs in a blanket on a greased baking pan and brush with egg wash. Bake in a preheated  350 F oven for 12-13 minutes or until golden brown in color. Let cool slightly then serve immediately.
