Easy-To-Make Grilled Watermelon Salad

This fresh summer fruit brings out exciting, smoky flavours with this recipe!


Grilled Watermelon Salad

Makes 4 servings

½ Seedless watermelon

½ cup Extra-virgin olive oil

4 ½ cups Baby arugula

1 bunch Basil leaves

* Favorite vinaigrette (optional)

1 cup Marinated feta cheese

⅓ cup Sliced Kalamata olives

*Balsamic crema or balsamic syrup, for drizzling

*Sea salt or kosher salt and freshly cracked pepper, to taste

  1. Peel the watermelon’s rind and discard. Cut the fruit in half and then quarter until you have nice triangles. Cut them into ½-inch-¼-inch thick slices.
  2. Brush the watermelon slices lightly with olive oil and place on a hot grill or grill pan and grill both sides. Allow the grilled watermelon to cool to room temperature then refrigerate.
  3. Next, combine the arugula and basil in a bowl. Toss and dress lightly with extra virgin olive oil or your favorite vinaigrette.
  4. Plate the arugula and basil then top with grilled watermelon slices, feta cheese, and olives.
  5. Before serving, drizzle the watermelons with balsamic cream and season with salt and pepper.
