Easy Breezy: Banana Buckwheat Pancakes Recipe

What’s not to love with these vegan and dairy-free pancakes? Banana and buckwheat come together to create these pancakes loaded with fiber and protein. Breakfast is the most important meal of the day, and it’s best to start it with a healthy plate of these pancakes.


Banana Buckwheat Pancakes
Makes 8 pancakes


½ cup Buckwheat flour

½ cup Whole-wheat pastry flour

1 Tbsp Ground flax seeds*

1 ½ tsps Baking powder

  • Pinch of salt

1 Tbsp Coconut sugar

½ tsp Ground cinnamon

1 cup Soy milk

¼ cup Water

2 pcs Banana, peeled

  • Canola oil for brushing the pan


  1. Purée all the ingredients in a blender or food processor.
  2. Heat a small non-stick skillet over low heat and brush with a little canola oil.
  3. Pour ¼ cup of the batter onto the skillet and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.
  4. Serve with honey or coconut sugar syrup. Top with sliced bananas and walnuts, if preferred.
