Don’t Miss Out On This Easy Mango Tiramisu

Easy Mango Tiramisu

Makes 8-10 servings

2 cups Mascarpone or cream cheese
1 cup all purpose cream
1/2 cup powdered sugar
2 tsps vanilla extract

For soaking:

1 cup brewed coffee

2 Tbsps sugar

2 Tbsps local brandy
20-25 pcs broas or lady fingers
3-4 fresh mangoes, sliced thinly

 

  1. In a mixing bowl combine mascarpone, all purpose cream, powdered sugar, and vanilla extract.  Beat at high spread until all ingredients are well combined. Transfer to a bowl and cover with cling wrap.  Chill until ready to use.
  2. In another bowl, mix coffee with sugar and brandy.  Dip the lady fingers in the coffee very quickly then line the bottom of a serving dish with them.  Lady fingers should still be firm and not soggy. 
  3. Next, use a rubber spatula to spread the cheese mixture on top.  Cover this layer with some sliced mangoes.  Add another layer of lady fingers, then another layer of cream and then mangoes as a final layer.  This makes 2-3 layers, depending on the size of your serving dish.
  4. Chill this in the refrigerator for a few hours before serving.  This is also delicious when served frozen.
