Our Dirty Rice Is The Dish You Need For Your Halloween Menu

Need a fun rice dish that can go along with your Halloween theme? Then cook our “dirty rice” made flavorful with aromatic seasonings, chicken liver, and bacon! If you’re going for the total package then prepare it with the Tombstone Chicken Nuggets. It’s a guaranteed hit with the kids and the grown-ups too!

 

DIRTY RICE
Makes 6-8 servings

10 strips Honeycured bacon, sliced
¼ kilo Lean ground pork
1 Large onion, chopped
3 stalks Celery, minced
½ cup Minced red bell pepper
½ cup Minced green bell pepper
¼ kilo Chicken livers, washed and diced
1 tsp Salt
1 tsp Ground cumin
½ tsp Ground oregano
¼ tsp Cayenne pepper
Freshly-ground black pepper, to season
6 cups Cooked white rice
2-3 Tbsps Liquid seasoning

  1. In a large wok, fry bacon bits until fat is rendered and bacon becomes crisp.
  2. Mix in ground pork and continue sautéing until pork is cooked. Pour out any excess fat.
  3. Next, sauté onion for about five minutes until soft, then add celery and peppers.
  4. Add chicken livers and cook until pieces change color. With a fork, mash livers gently into the mixture.
  5. Season meat and vegetable mixture with salt, cumin, oregano, and ground pepper.
  6. Add the cooked rice and toss to distribute evenly. Season with liquid seasoning. Serve hot with nugget tombstones.

NUGGET TOMBSTONES
8 Chicken Nuggets
Cooking oil, for frying
Nori sheets, for decoration

  1. In pan, fry store-bought chicken nuggets in cooking oil until golden brown. Transfer nuggets to a plate lined with paper towels to absorb excess oil.
  2. Cut out thin strips of nori sheets to make a cross. Stick nori sheets on nuggets by patting them lightly with water. Assemble the “graveyard” by making a big mound of Dirty Rice on a platter. Stick tombstone nuggets into the rice.
