With its unique combination of French beans and caramelized onions, this is no ordinary salad. It’s an appetizing dish perfect for anyone looking for something new to serve to their guests. This dish proves that sometimes fancy-looking doesn’t mean hard-to-make.


French Beans and Candied Onions Salad
Makes 2-3 servings


¼ cup Butter

1 Tbsp cooking oil

4 Large onions, peeled and sliced

¾ cup Sugar

¼ cup Red wine

¼ kilo French beans (haricot verts), blanched and shocked*

  • Salt and pepper, to season


*How to shock vegetables: Prepare a metal bowl filled with ice and water. After blanching vegetables such as green beans or broccoli, immediately drop vegetables in ice water to stop cooking. This step helps retain the vegetables’ appetizing green color.


  1. In a saucepan, heat butter and cooking oil over low-medium heat. Sauté the onions until soft and slightly caramelized, about 12-15 minutes.
  2. Mix in the sugar and stir until dissolved. Pour in the red wine and simmer uncovered for about 4-5 minutes. Season with salt and pepper. Turn off heat and let cool. Chill candied onions until ready to use.
  3. In a bowl, prepare chilled French beans by seasoning with salt and pepper. Plate the salad by preparing a small bed of candied onions, then top with some French beans. Drizzle with liquid from caramelized onions. Serve immediately.
