Make your own sweet, healthy treats with this D-I-Y snack recipe!


Dairy-Free Peanut Butter and Chocolate Truffles

Makes 16 pieces

¼ cup Refined coconut oil

¼ cup Soymilk or almond milk

½ cup Coconut sugar

2 Tbsps Unsweetened cocoa powder

¼ cup Peanut butter

1 tsp Vanilla extract

1 ½ cups Quick cooking oats

⅓ cup Roasted cashews, finely chopped

  1. Combine the coconut oil, soymilk, coconut sugar, and cocoa powder in a saucepan and bring to a gentle boil. Whisk until combined and turn off the heat.
  2. Transfer the mixture into a bowl. Add the peanut butter, vanilla extract, and quick cooking oats. Mix well and refrigerate for an hour.
  3. Scoop a tablespoon of the mixture and with oiled hands, roll into balls. Afterwards, roll them onto the cashew nuts to coat the truffles.
  4. Place in lined holiday boxes and keep the truffles in the chiller until you’re ready to give them as gifts.
