Hoisin Pork in Crispy Wonton Cups
Makes 15 servings

FILLING

15 pcs Medium-sized dried shiitake mushrooms

3 Tbsps Canola oil

1 Onion, chopped

½ kilo Ground pork

1 cup Diced carrots

1 cup Chopped water chestnuts

SEASONING SAUCE

3 Tbsps Oyster sauce

2 Tbsps Hoisin sauce

2 Tbsps Chili garlic sauce

1 tsp Sugar

1 tsp Red cane or apple cider vinegar

1 tsp Sesame oil

15-16 pcs Round wonton wrappers

2-3 cups Cooking oil

½ head Large iceberg lettuce

  • Coriander (wansuy)
  • Chopped roasted peanuts

  1. Soak dried mushrooms in a covered bowl of hot water. When mushrooms are soft and rehydrated, cut off stems and slice caps into thin strips. Reserve soaking liquid and set mushrooms aside.
  2. In a wok, heat canola oil. Toss in onions and sauté until soft and fragrant. Next, add ground pork and sauté over medium heat until meat changes color. Cover wok with a lid and turn down heat to low.
  3. Meanwhile, combine ingredients for seasoning sauce in a bowl. Mix well.
  4. Add seasoning sauce to the pork then add ½ cup mushroom liquid.
  5. Add carrots and water chestnuts then continue to simmer for 8-10 minutes more. Turn off heat.
  6. Meanwhile, prepare fried wonton cups. Heat a medium-sized saucepan and pour oil about 3 inches deep. When oil is hot, slip a wonton wrapper in a small strainer (or spider) then press over it with a soup laddle. Carefully lower this into the hot oil and fry for 1-2 minutes until golden. Repeat until all wonton wrappers are fried.
