Our Stuffed Peanut Butter & Jelly Sandwich should be your next baon!

Tired of your usual peanut butter sandwiches for breakfast? This rich and crispy sandwich will surely make your mornings more exciting. Try it with peanut butter, honey, and thinly sliced bananas for an Elvis sandwich. You can also swap peanut butter with cream cheese to make a classic cheese and jam combination, or use other kinds of flavored sliced bread such as chocolate or black forest stuffed with chocolate-based spreads.


Makes 6-7 servings


1 pack Thick, white, sliced bread

Creamy or chunky peanut butter

Choice of jam (we used strawberry)

1 recipe Pancake mix batter

2 cups Crushed cornflakes

Corn oil, for frying

Confectioners’ sugar, for dusting

  1. Spread peanut butter on one slice of the bread and jam on the other slice to form a sandwich. Make as many sandwiches as needed. Trim all the edges with a bread knife or cut out shapes using a large cookie cutter. Transfer sandwiches to a tray and keep sandwiches in the freezer to firm up.
  2. Meanwhile, prepare a batch of pancake mix. Crush cornflakes by pounding or pulsing in a food processor until you get coarse crumbs.
  3. Dip frozen sandwiches in pancake batter and coat with crushed cornflakes. Return to the freezer until ready to fry.
  4. When ready to cook, heat corn oil in a medium saucepan, about two inches deep. Fry stuffed sandwiches for about two minutes on each side until golden brown, turning once.
  5. Dust confectioners’ sugar on top or serve with pancake syrup on the side.
