Chili con Cocoa
Serves: 3-4
This isn’t your average bowl of chili! Chicken and chocolate is a pairing common in Latin America and gives this chili recipe depth and complexity of flavor. This one-pot recipe that can be made with what’s already in your pantry makes it a simple, hearty, and delicious meal to boot.
  • ⅛ cup canola oil
  • 1 large white onion, chopped
  • 500g ground chicken
  • 1 tbsp cocoa powder
  • 1 tbsp chili powder
  • 1 tsp ground cayenne pepper
  • Salt and pepper to taste
  • ½ tsp ground allspice
  • ¼ tsp ground cinnamon
  • 400g canned chopped tomatoes
  • 2 tbsps tomato paste
  • ½ cup water
  • 2 cubes dark chocolate
  • 1 ½ cups red kidney beans, undrained
  1. Cook onions until tender over medium heat. Add chicken and stir until cooked.
  2. Add cocoa, chili powder, cayenne pepper, salt, allspice, cinnamon, tomatoes with liquid, tomato paste, and water. Boil and reduce heat.
  3. Add chocolate pieces and beans. Simmer for 30 minutes. Serve and garnish as desired.
