This recipe combines two strong flavors into one superb barbecue treat. What’s also great about this soon-to-be your-new-grill-fave is how easy it is to do. Prepare it the day before and cook it when you need to. Try the teriyaki marinade also with pork and beef. You can also add other vegetables like zucchini and tomatoes.

Makes 4-5 servings

½ cup Light soy sauce

¼ Mirin

2 Tbsps Sake

¼ cup Pineapple juice (from pineapple can)

2 Tbsps Light brown sugar

1 Tbsps Sesame oil

3 tsps Grated fresh ginger

2 cloves Garlic, finely minced

Dash of pepper

½ Boneless chicken thigh fillet

1 small can Pineapple chunks

Sesame seeds, for topping

  1. Mix the light soy sauce, mirin, sake, pineapple juice, light brown sugar, sesame oil, fresh ginger, garlic, and pepper in a bowl.
  2. Marinate the chicken in the teriyaki sauce mixture for at least 30 minutes or overnight.
  3. When ready to cook skewer a piece of pineapple then th marinated chicken into water-soaked barbecue sticks. End the barbecue with another piece of pineapple chunk. Do this for the rest of the ingredients.
  4. Grill the chicken barbecue over medium-high heat for about 5-6 minutes each or until cooked through. Remove from heat when finished. Serve with freshly cooked rice.
