Chicken Noodle Soup
Serves: 4-6
It's starting to get a bit chilly out there. You don't have to be sick to enjoy this classic, but if you're coming down with something, this chicken noodle soup recipe is the perfect pick-me-up.
  • 3 chicken legs, cubed
  • 3 tbsps miso paste
  • Chicken broth cube
  • 2 tbsps ginger, minced
  • 2 garlic cloves, minced
  • Noodles of your choice
  • Green onions, diced
  • 1 cup broccoli
  • 1 cup bok choy
  • 2 medium carrots, sliced
  1. Brown chicken legs for about 7 minutes on medium heat.
  2. In a separate pot, add the broth cube to 6 cups of boiling water. Dissolve the miso.
  3. Add broth to chicken. Add the garlic and ginger and simmer until chicken legs are cooked through.
  4. Add carrots to the broth and cook for 5 minutes. Add broccoli and bok choy.
  5. Switch off the heat and add green onions. Season with pepper.
