Here’s a finger-lickin’ chow you can indulge in that’s made with salted egg and lots of hot pepper sauce! Prepare it for game nights or for home movie previews. You can also even use fish fillet or pork strips if you want to change your meat.

1 Egg white

2 tsps Cornstarch

½ tsp Salt

½ tsp Hot sauce

½ kilo Chicken breast fillets, sliced into strips (or any chicken choice cut)

1 cup Flour

1 cup Cornstarch

2 tsps Baking powder

1 tsp Salt

¼ tsp Ground black pepper

1 tsp Hot sauce

2 cups Cold water

Cooking oil, for deep-frying

3 Salted eggs

½ cup Butter

1-2 tsps Hot sauce

1. In a bowl, combine egg white, cornstarch, salt, and hot sauce. Marinate the chicken strips and set aside in the refrigerator.

2. Prepare the batter. In a mixing bowl, combine the flour, cornstarch, and baking powder. Stir in cold water with a wire whisk until batter is smooth but runny. Season the batter with salt, black pepper, and hot sauce. Keep batter chilled until ready to use.

3. Heat cooking oil in a wok or large frying pan. Dip the marinated chicken fillet strips in the batter and immediately drop them in hot oil. Deep-fry chicken pieces until lightly golden. Let fried chicken strips rest in a colander lined with paper towels. Set aside.

4. Prepare the Buffalo Salted Egg Sauce. Peel salted eggs and cut in half. Scoop out the yolks and mash them in a bowl (use whites for another recipe or discard). Melt butter in a pan and mix in mashed salted egg yolks. Add hot sauce and turn off heat.

5. Toss fried chicken strips in the Buffalo Salted Egg Sauce making sure everything is well coated. Serve immediately.
